Once the collection is created other games can be added to it simply just by dragging it into the desired collection.

Make shelves

Shelves are ways to see your collections in the larger areas of the Steam clients. By right-clicking on a game and selecting Manage>Hide This Game you will remove the game from the active view of your Steam library.
